Flavor-Packed Marinated Chicken

You know when a dinner is so good, you immediately start thinking about when you can make it again?

Yeah—that was this chicken.

It’s juicy, flavorful, a little sweet, a little savory, and super easy to make. I originally whipped it up to go on top of my creamy cashew ranch romaine salad, and the combo was next-level. Even my boyfriend—who isn’t exactly known for requesting salad for dinner—was seriously impressed. And if it’s boyfriend-approved, you know it’s a keeper. 

So whether you’re meal-prepping for the week or throwing together a summer dinner that feels fresh and fun, this chicken marinade is one of my go-to recipes.

  • 700g organic chicken breast

For the marinade:

  • 2 tbsp honey or brown sugar
  • 1 tbsp olive oil
  • 5 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper

  1. Mix all the marinade ingredients in a ziplock bag or a container that fits the chicken snugly. Add the chicken and make sure it’s fully coated.
  2. Marinate in the fridge for at least 30 minutes (3 hours to overnight is even better if you have the time).
  3. Grill the chicken until golden and cooked through. That’s it!

After grilling, I sliced the chicken and layered it over a big bowl of chopped romaine lettuce tossed with my creamy cashew ranch dressing.

I added a sprinkle of fresh dill and chopped chives—only because I had leftovers from the dressing—and it brought everything together beautifully. Totally optional, but highly recommended.

This salad has been on repeat in my house lately, and I love how satisfying, light, and energizing it feels. It’s the perfect example of what I teach in my programs: you don’t need to eat perfectly to eat well—you just need to understand how to balance flavor, nutrients, and joy in a way that feels good in your body.
