2 garlic cloves, crushed
1/2 large yellow onion, peel on and cut in half
2 green onions
2 bay leaves
Large handful of fresh thyme
Half a bunch of fresh parsley, leaves and stems
Bunch of whole black peppercorn
Pinch of sea salt, optional
Water, preferably filtered
Place all ingredients in a large pot.
Pour enough water to cover the vegetables by an inch.
Cover with a lid slightly vented. Low simmer for 30 minutes.
