Trust me; you’ll make this one on repeat
3-4 cups shredded red cabbage
2 leaves curly kale, chopped
1 carrot shredded
2 green onions chopped
1 cup cilantro
2 mini peppers, I used 1 red and 1 orange
1/2 large cucumber peeled and thinly sliced
Crushed peanuts
1 thin inch piece of ginger
1 clove garlic
1/2 cup natural peanut butter
Juice of ½ an orange
Juice of 1 lime
2 tablespoons Tamari
3 tablespoons pure maple syrup
a squirt of sriracha sauce
½ teaspoon salt
Make the dressing: Add all the dressing ingredients to a food processor and mix until smooth.
Assemble the salad:
Combine the red cabbage, kale, carrot, green onions, cilantro, peppers, and cucumbers in a large bowl.
Pour as much peanut dressing as you like and toss to combine.
Sprinkle with crushed peanuts and toss well.
